Healthy Banana Bread

Ingredients
2 cups flour (wheat if you have it)
1 tsp baking soda
1/4 tsp salt
1/2 cup no sugar added applesauce
1/2 cup honey
1/4 tsp nutmeg
1/2 tsp cinnamon
1 tbsp unsweetened cocoa powder
2 eggs beaten (I used egg beaters)
2 mashed overripe bananas
1 tsp vanilla

Directions
Mix dry ingredients and wet ingredients separately.  Add wet into the dry (add nuts if desired).  Pour into a greased loaf pan and bake at 350 for approximately 1 hour.

Pasta With Lemon Olive Oil

Ingredients: 
2 teaspoons fresh lemon zest 
1/4 cup lemon juice 
1/3 cup extra virgin olive oil 
2 large garlic cloves, minced 
1/2 cup kalamata olive, sliced (optional) 
1 pint cherry tomatoes, halved 
3 tablespoons basil, julienned 
salt & freshly ground black pepper (to taste) 
1 lb fresh linguine 
1/4 cup grated parmesan cheese (opitonal) 
Directions: 
1 Combine the lemon zest, lemon juice, Extra Virgin Olive Oil, garlic cloves, Kalamata olives and cherry tomatoes. 
2 Cook pasta and reserve 1/4 cup (60mL) pasta water. 
3 Drain and toss pasta with olive oil mixture and reserved pasta water. 
4 Toss with basil and Parmesan cheese, season with salt and pepper. 
5 Garnish with extra Parmesan cheese if desired.

Crustless Breakfast Quiche Muffins

Photo by **Tinkerbell** These are delish!  Notes from food.com says they are 3 Weight Watchers points per muffin when using low fat sausage, cheese and baking mix and fat free milk. I made some with sausage, others with crumbled bacon.  I think they would be sooo good with a little feta and veggies instead of the meat version.  YUM!  It took longer than 20 mins to get a clean tooth pick...more like 30(ish).

Ingredients:
3 eggs
1 1/2 cups milk
1/2 cup baking mix
12 ounces sausage
1/2 cup cheddar cheese, shredded

Directions:
Preheat oven to 350. 
Brown sausage, breaking with a spoon. Drain well.
Mix egg, milk and baking mix. Season with salt and pepper.
Divide egg mixture between 12 greased muffin tins.
Divide sausage between muffin tins and cover with cheese.
Bake 15-20 minutes or until tooth pick inserted comes out clean.
Freeze left over muffins in single serving zip top bags. To reheat, place frozen muffins in microwave for approximately 60 seconds.

Grilled Buffalo Chicken Salad

Ingredients

Chicken Breast
Frank's Red Hot Wing Sauce
Lemon Juice
Olive Oil
Garlic Powder
Onion Power
Salt, Pepper
Romaine
Cucumbers, Carrots
Bleu Cheese
Sour Cream
Avocado

Directions

1. Marinate chicken in a couple tablespoons of olive oil, Frank's Red Hot Wing Sauce to coat, onion and garlic powder, salt & pepper.  Grill chicken and slice.
2. Chop Romaine, carrots, cucumbers and whatever veggies you want.
3. Mix 1/2 light sour cream with Frank's wing sauce and the juice of half a lemon, add salt and pepper to taste.
4. Mix salad with dressing, top with chicken, avocado and bleu cheese.

Grilled Greek Chicken and Vegetables

Ingredients
Chicken Breast
Peppers
Onions
Yellow Squash
Zucchini
Greek Seasoning (bought from Delo's at Farmer's Market)
Lemon
Olive Oil
Fresh Parsley
Salt, pepper to taste

Directions
1. Cut chicken and veggies in bite size pieces, marinate in seasoning, lemon juice and zest, olive oil and salt and pepper to taste.
2. Grill in grill pan or on skewers
3. Top with chopped parsley and serve with homemade tzatziki (see below)

Tzatziki
1/2 seedless cucumber shredded and drained
Small container of fat free Greek yogurt
2 tablespoons low fat sour cream
Lemon juice, salt, pepper to taste

Mix and refrigerate for a couple hours before using.
Grilled Pesto Chicken Flatbread
 
Ingredients
Grilled chicken breast, sliced
Homemade (or prepared pesto)
Flatbread (used store bought Naan here)
Fresh Mozzarella
Arugula
Olive oil
Lemon Juice
Parmesan Cheese
 
Directions
Lightly grilled on side of the Naan, flip and top with pesto, grilled chicken and fresh mozzarella. Grill until warmed through and cheese is melted.  Toss argula with 1 tablespoon of olive oil and lemon juice to top.  Add to the top of flatbread.  Top with shredded parmesan.
